First on the rookie point, take the Motorcycle Safety Foundation beginning riders' course. It might just save your life one day.
Second, as far as the carb goes: The mods are fairly easy. The rejet (at least for the mainjet) can be done without taking anything off except the float bowl. The real question is not if you know anything about "motorcylce mechanics", but rather, do you know anything about working on engines in general. You stand a much greater risk at stripping screws, tearing diaphrams, etc.... than you do at making some not-easily-corrected mechanical mistake on the bike. If you are comfortable turning a wrench, go for it. If you've never torn apart a weedwhacker, lawnmower, etc..., you might want to get someone to look over your shoulder....
